Potato, onion and roast beef sandwich

Ingredients

  • 400 g Arla Organic cottage cheese 4,5 %
  • 15 g coarse mustard
  • 15 g freshly squeezed lemon juice
  • 3 g coarse salt
  • freshly ground pepper
  • 200 g cold, cooked potatoes in small cubes
  • 100 g finely chopped red onion
  • 10 10 toasted and cooled wholemeal rolls
  • 300 g roast beef – thinly sliced
  • 200 g pickled pumpkins
  • 50 g roasted onions – ideally home-made
  • 200 g finely chopped cos lettuce
  • 10 portions

Blend the cottage cheese, mustard, lemon juice, salt and pepper until smooth and creamy in a robot or food processor. Stir the potatoes and onions into the cream. Spread the cream on the buns and serve on a bed of finely shredded lettuce along with the remaining ingredients.
