Warm potato salad with vegetables and herbs

Ingredients

  • 1 kg scrubbed new potato
Warm potato salad
  • 100 g light diluted vinegar
  • 50 g sugar
  • 9 g coarse salt
  • freshly ground pepper
  • 300 g new carrots i mindre stykker
  • 150 g red onion i både
  • 200 g Puck® Whipping Cream
  • 150 g spring onion i mindre stykker
  • 50 g finely chopped fresh herbs fx. dild, kørvel, persille og løvstikke
  • 10 portions

Boil the potatoes in lightly salted water until tender but firm. Halve the potatoes.

Bring the vinegar, sugar, salt and pepper to a boil in a heavy-bottomed saucepan. Add the carrots and red onions and cook covered for about 1 min. Add the whipping cream and cook uncovered for another 5 min. Combine the potatoes with the spring onions and heat through. Season to taste.

Sprinkle the potato salad with fresh herbs.
